Pomegranate Sauce Recipe

1/2 cup pomegranate molasses

1/3 cup orange juice

1/2 cup brown sugar

2 shallots

1 bay leaf

1 teaspoon orange peel

pinch of cayenne

a flash of black pepper

Bring to the boil and whisk occasionally. Reduce heat and simmer for 5 mins.

Goes beautifully with a roast leg of lamb.
